I would take less HDD and more SSD. SSD is better and currently spot cheap. To the rest I can't say much, do not know me in the price range. But you will not be able to fire up your monitor with an Rtx 2080 at 165 Hz. To the mechanical keyboard: Just do not buy a Razer Ornata! Find something from Sharkoon or Corsair, where you can get keyboards for less than 100 euro class.
To stream I would rather take the ryzen 7 2700 and a 2070 also costs 600 euro if you want, I can put together my variant for you

The 2700/2700x is a bit better for streaming because it can handle more threads, and the CPU at 1440p is not that crucial for high FPS anymore.
The map is extremely expensive. A 2070 is already under 500 euro (for example from ZOTAC).

At Mindfactory, the MX Board 3.0 with MX-Blacks is unbeatable (36 euro), so you will never make a mistake. Linear switches are pretty good, especially for shooters.
The Dark Rock Pro 4 is not bad, but there are many coolers that can dissipate more power at less cost, e.g. The HR-02 Macho but also Brocken or Mugen have much better P / L-V.
The PSU is good. Personally, I think it's a bit too big for the components (it would rather start at 500W) but it has all the necessary protection circuitry, is quite up to date and has a high efficiency.

The B450 boards are even cheaper than an Asrock B450 Pro4 or Fatal1ty B450 cost no 90 euro. This is actually enough, with a 2700x you probably will not overclock yourself, but the run on Precision Boost 2 and for the phases and spawas of actually every B450 are quite sufficient.
If you want to set OC records, you will not get past an X470 board that starts at 130 euro.
