Unfortunately I can't assemble any PC's, but I'm looking for a good one for around 400 euro.
My goals are to create a relaxed 80 FPS in games like GTA 5, Fortnite, Rocket League, so without a stuttering or hanging picture.
Would the following PC do that or could you recommend me for gambling?
(I know that the computer does not have its own graphics card. I will retrofit it so please rate it apart from the graphics card)

With 400 euro, you probably won't get 80 FPS easily. I recommend a budget of at least 750 euro for a gaming PC because you probably won't be able to achieve this performance with that.
The CPU is not bad and with a 1050 Ti I shouldn't be able to manage 70fps?

I think you're confusing that. The Ryzen 5 3400G is different from the Ryzen 5 3400. I can already see from the values that it is not good. 4 cores with 3.7 GHz is not particularly good.

With ready-made PCs, however, you should be careful because people like to cheat. I myself already had 2 ready-made PCs that all had some problem and after a short time also gave up the ghost. Since then, I've always been building my own PCs (two so far). It's not that difficult at all. But that's a different topic.
With a good graphics card, I think that 70-80FPS should be in it.
