I have a 144hz monitor and want to assemble a gaming pc. Is an AMD Ryzen 5 3600 with an RX 5700 XT Dual Evo OC 8GB enough to take full advantage of the screen with 144 FPS. As examples of the games I like to play: Rainbow Six Siege or Fortnite. So the components in both games are enough to reach 144 FPS

According to gpu.userbechmark, the 2060S is approx. 2% faster that of course depends on the game. But you should find them in a similar award show depending on the custom design
