So I just read that Fornite overwrites your repetitions after 100 matches. But not the already renamed and saved. But just looking at it, I see that my saved games are all highlighted in red and are no longer playable. Now my question is, is there a way to look at these replays again and if not, how can I prevent this from happening to me again?

You have the function to save the replays in Fortnite, but you can also simply copy the Replay file from the folder to another folder you have created yourself and then copy it back in if necessary.
If this is "expired" then I do not know you have to try it.
Red does not mean that the replays have been overwritten (otherwise they would not be there anymore). These are replays made with an earlier version of the game. These can't be played after updates on newer versions of Fortnite. That is not to change. Since the developers would rewrite the replay mechanics to allow this.
