You could compress the files. Then Fortnite takes up significantly less space. But it may be that the game takes a little longer to start.

You just have to click on the folder "C: \ Program Files \ EpicGames \ Fortnite" on the right. Then on "Properties / Advanced" and there you tick "Compress content". Then when you click OK it takes a while for the whole folder to be compressed. This should make it a lot smaller.
