So I have a problem who I play Fortnite I have 120 fps but I only 60 fps are displayed because I also have a 60hz monitor. But I notice partly that despite 120 fps I do not see 60 fps but much less… What can that be?

Time V sync turned on? Then the constant at 60fps and more you do not need, or your monitor anyway not.

There are often small micro-stutters in the game. You can show you the frame rate, if there's 120 FPS, then that actually fits like that.

Why does it feel smoother like 60fps despite 60Hz? The tearing does not occur that much, because there are always enough pictures available.

You like to confuse 60 Hz with 60 FPS. One produces your graka and the other is a repetition rate on the screen.

So if there 120 FPS is displayed, 120 images are supplied by the Graka. Makes things smoother at a repetition rate of 60 Hz.

The you offt stuttering etc etc, is s.der server, etc. Can play offline so then you do not have the problem.

With Vsync you have a greater input lag, in shooters very unfavorable, because the picture is always a bit behind. Just 120 FPS Cap and then that fits, Vsync is not recommended in shooters.
