I want to play games like Fortnite or Realm Royale on 1440p with 144FPS with a GTX1060 6GB.
Games like Euro Truck Simulator easily manage to 144FPS.

Which GPU should I get if the GTX 1060 is not enough for the games mentioned?

It all depends on the game, but you don't buy a monitor every 3 years! That's why you can already access if the coal is loose! The new graphics card will definitely come after and at the latest at the point, glad of the good monitor!

On graphics settings high under full hd come to about 130-150 fps that should work
As for the graphics card, I recommend an RTX 2060S or 2070S. Both have the chip of the higher model on them! You could wait a bit until the 3080s are out because then you can get the 20s cheaper!

Everyone can do as he wants! I personally am Intel + nvidia Fanboy! AMD has caught up quite a bit lately but unfortunately the graphics cards do not (yet) offer ray tracing and for some people this is a purchase criterion!
