My setup currently consists of a GTX 1080, a Ryzen 5 3500x on a B450 board and 16GB DDR4 2400MHz RAM. My screen is a 21: 9 1440P 100Hz screen. I play a lot of esports titles like CS, Valorant, Rainbow Six Siege or Fortnite. But also the Assassins Creed titles and other triple A games. Now my question, regardless of the current situation that graphics cards are currently far too expensive, what should I upgrade first, the graphics card or the processor?

The setup is pretty balanced right now. It is actually sufficient for your purpose. An upgrade would not be worthwhile from a price-performance perspective.
Only the RAM is problematic with its low clock rate. I would try to see if you can overclock it a bit. The Ryzen processors benefit from this.
