As soon as Christmas is due and I wanted to buy a new pc I have 500 euro available. My question is you can put together with so much money a good pc that you can play games like dead by daylight, fortnite, gta5, etc?

And which page or configuration would you recommend to me?

For 500 euro, the new hardware is rather nothing. For 500 euro you can buy on ebay used hardware and obstruct. If you want new and powerful hardware you have to plan for the 800 to 900 euro as a minimum.

500 euro is a bit short for a gaming PC

That would be a possible combination

if you don't build it yourself, you can let it grow for a 100er at mindfactory.de and buy a Win 10 for 10 euro at mmoga.de

Generally, I would wait until after Christmas to buy. Often, stocks and remainders are cheap until after Christmas Spilled back to space in the warehouse. Often also under EK (depending on). So if you want to put together a PC, the best time would be AFTER Christmas.

As far as the selection of the components is concerned, one should commit oneself to AMD components. An example of how such a PC system can look like, I'll add as a picture. There's no compulsion to buy this config as well, just for guidance. The prices must have changed in the meantime and so also the components would have to be cheaper there.

And on YT there are enough videos showing how to assemble a PC yourself. Therefore, the recommendation would be to a home PC and not a assembled or finished by the shop PC.

Still a Ryzen 5 1600 today? The Rzen 5 2600 is better in every way and costs only 7 euro more, also you can buy much cheaper housing, dei look even better and because of the high power consumption of the RX 580 you need a more expensive power supply. I would recommend the gtx 1060 6gb, in the long run is the cheaper, for the same performance.
