I have a 500k line at home. This is also confirmed by the Google speed test. (see photo). But with the download (for example with me Fortnite) only 30-50 Mbits arrive. Why is that so? It's enough, but I'm still amazed. It would have to pull down 500 megabytes per second, right?

500k DSL are not 500 MB / s but 500Mbit, i.e. Only 62.5MB / s
These are different units. In the speed test 480 Mbit / s are displayed which is then the equivalent of 60 MB / s. So the speed is right. If it were downloading at 500 megabytes / s it would be 4000 megabits / s.
The download of the application also depends, for example, on the quality of the connection to the servers. Or how busy the servers are at the moment.
