I have a Mac and therefore unfortunately not enough memory to play many memory-intensive games that are stored on the Mac
I would therefore like to get an SSD to play games like GTA V or Fortnite, so my question is this hard drive (not from the storage but from the transfer speed) enough to play the games without jerking?

The rough dates:
SanDisk, 500 GB, 550 mbit, USB 3.1 Gen 2 interface, USB-C connection
You have a Mac so accept the expensive restrictions. You can basically forget about games via USB. Doesn't go very fast even with USB 3.
I have Thunderbolt and USB-C connections
Naturally! The transmission speed is more than high enough.
Others often still have their game library on magnetic hard drives, which are many times slower.
Both Steam and the Epic Games Launcher support the installation of the games on external storage media.

That is utter nonsense…
