Play in 240 fps and stream in 60 fps?

I would like to play Fortnite on my 240 hz monitor in 240 fps and stream it live with obs in 60 fps on YouTube. However, as soon as I start the stream, v-sync reduces the fps in Fortnite to 60. When I turn v-sync off I have 240 fps again but then it seems to me as if the monitor only has 60 hz because Fortnite still feels like in 60 fps. If I record Fortnite with obs (video), it does not jerk, Fortnite achieves 240 fps despite v-sync and it does not jerk. How can I achieve this in the livestream?

can you set an FPS limiter next to VSync at Fortnite? Then you can leave VSync turned off.

Yes, he also has G-sync and I have set the FPS limiter to 240 fps, but unfortunately that doesn't change the fact that I can "only" play at 60 fps when streaming. So as I said in my question above, it shows 240 fps but it feels like 60 fps and I don't imagine that, because when I end the stream, you immediately notice that Fortnite is running much smoother again, even though it's still 240 fps. And I don't understand why that is so. What can I do against it?

In this case, OBS slows you down, you can stream at a maximum of 60FPS and it is easier for the transmission instead of compressing every time on the way.
