My focus is on gaming (Fortnite) and I don't know whether to get the Ryzen 7 3700X or the i7 8700k. Are there any recommendations? And maybe at the same time recommend a cooler that would allow me to overclock.

With Fortnite you won't notice any big differences, my recommendation is also the Ryzen 3700x, because you are significantly better with AMD than with Intel in terms of price-performance ratio. Of course, if you want to overclock heavily, that doesn't work so well with AMD, the Ryzen processors don't overclock as much as the Intel processors, I also have a Ryzen 3700x and only clocked it up by a few 100MHz, but then reduced the voltage to save electricity and waste heat. The Intel i7-8700k is out, you no longer buy it. Take the Ryzen 7 3700x in combination with 2x 8 GB DD4 3600 MHz RAM. The MSI B450 Gaming Plus Max is recommended as the mainboard. As a CPU cooler, I would use the beQuiet Dark Rock 4 (Pro).
