I wanted to build a PC with an AMD Ryzen 5 3600 and an 8GB KFA2 RTX 2060 SUPER. Is that a good combination?

How many FPS would I play in such as fortnite csgo gta, and so on?

Yes, that's a good combination. Enough FPS. All mentioned games will bore the hardware.

Ryzen 5 3600 + RX 5700XT custom design would be better here.

Maybe he wants to record gameplay or work with software that nvenc supports.

That's a solid combination. FPS can't be appreciated, but it will be enough.
