So I can only think of a few reasons:
Calculate fewer pixels = more fps = less inputlag = minimal benefit. But you only have to reduce your resolution in general, not necessarily in 1080x1080 or similar.
I would have a larger field of view but only vertical. Since Fornite built a lot of vertical and therefore also shot this could be another minimal advantage. However, you may also get to the wide problems with aiming because the figures then look smaller than they actually are.
If, for whatever reason, your personal perception gets along with it better than with normally normal figures, then maybe your goal is a little better. But is more or less a placebo because there are virtually no practical advantages. (except those mentioned are always disadvantages at the same time)
Since this is not supported by the game by default, it takes a lot of effort for something that actually does not offer a clear advantage. Why do people do it anyway? Some like to try it out, some even like it (personal preference) but most just do it because some people do not even know why they do it that way.

I play in 2560x1440 - which corresponds to 16: 9 standard (ie as 1920x1080 only higher resolution). I used to play Counter Strike in 4: 3 - because at that time it was still a 4: 3 monitor and later also stretched. Although I play many competetive games (also in the area of master rankings so top 2%) I completely renounced stretched, 21: 9 or other tricks. I.d.r. I prefer a good clear optics - high resolution (for better visibility) and high fps on the hardware (which is then expensive accordingly). I can tell you but in total from experience the difference between 4: 3 to standard resolutions is not great at all and if you have aim anyway relatively irrelevant. Ne high FPS number without visible drops have even clearer advantages but are also far from huge.
