Hi! I have a YouTube channel where I would like to upload Fortnite, but I play on the Switch so I don't know how to record it

You can only record the last 30 seconds. But that's not possible with Fortnite.

You just need a PC with a capture card.

Unfortunately, there's no other option. I hope they'll do it at some point, like streaming it live on PS4 and so on.

Unfortunately no, unless you have a capture card with which you can stream and record the image.
