On the top of gaming PC's you can watch what you want to spend, but I mean you want / want to buy an iMac for 1300 euro because that should not be a problem then have free choice.

I have to speak here. The 1080ti is currently barely available, even not at all. Instead I would bet on an RTX 2060 which will appear in the near future. Otherwise, the 2070 in the price range of 600 euro would be interesting. And also the processor I would switch to AMD, since Intel currently has problems and thus the prices are still very high. Clear Intel has better performance but is therefore more expensive. The rest is ok.

IMacs and MacBooks are work machines that are by no means designed to play on it, so get a gaming machine if you can.
