But if I then give the opponents multiple headshots with an epic weapon, then the opponent suddenly doesn't go down and the person eliminates me with just two shots?!

Sometimes I build a fortress and they just shoot through the wall. That must be a mistake.
You can't be eliminated in 2 shots except with Sniper! Not even with hacks! They always heal up their opponents. Shooting through the wall maybe bad ping?!

As I said: I have the problem too. I'm really not the worst Fortnite player. It is really unfairly balanced at the moment. But it will be fixed soon.
