Power supply: 750 watts best of corsair 850 or 650 watts are also needed but a recommendation 100-180 euro

and what would you change here for the esports area (except the one mentioned above with the water cooling and the rx 5700 xt) then I will aim for 240Hz, i.e. 240 FPS e.g. Mainly in fortnite and have pros like e.g. Mongraal or something overclocked your cpus? Because e.g. Mongraal will always be active in the esports area (competitive)

In the first place you have to have hands first. I myself achieved in lol master with a 400 euro laptop (8 years ago) and 15 fps in teamfights. My colleague had a 1000 euro pc and did not come out of silver.

then to your setup. Do you just want to gamble or stream? If you just want to gamble, that's way too much. But if you have the money you can do what you want.

You don't need 150 euro water cooling to get the most fps. You need just as little a 100 euro fan or a 180 euro power supply. If you're really only interested in the fps then you can save on the above and get a 2080 super or maybe even a 2080 ti. Or you wait a few more months and switch directly to the RTX 3000 series.
