When I play with Direct 12 everything goes perfectly and I have 160+ FPS, when I switch to Directx 11 I have 50 FPS and everything is jerky. How can that be?
Could be because DirectX 12 is better optimized in the game. Overall, DirectX 12 does a lot differently than DirectX 11. You can read about what exactly:

I couldn't think of any other reason spontaneously.
Thank you very much. But is that really that bad? I mean, my system isn't so bad that I can't even manage a constant 60 FPS with Directx 11, right?
Well, a game apparently benefits most from multiple cores under DirectX 12. That makes a difference.
Oh, does DirectX 11 only use one core?
Certainly not, otherwise nothing would go well. But what is possible is not used.
Okay thanks. And maybe you can help me there by chance, but when I want to stream Fortnite with OBS, the game always closes. What can that be?
Just like that or does it crash? It could be that the hardware doesn't handle it. Otherwise I have no idea: /
