AMD is actually a much better choice than Intel. The inexpensive processor with 8 cores and hyperthreading from AMD is available for less than 200 euro, whereby Intel has to put over 500 euro on the table.
Except for the i9 9900K, which is still by far the best gaming CPU, I can't recommend an Intel processor. Since you've already suggested the Ryzen 5 3600, I don't think an i9 9900K will go out.
The Ryzen 5 3600 is a good choice, there's no better CPU from Intel in the price range. The performance upgrade to your current processor is also very large.

AMD are by far the better CPUs. And as far as the higher single core performance is concerned, it is true, but in reality when playing, it does not work at all. Because every normal gamer plays so that his GPU is fully utilized. And if that is the case, the difference in the CPUs is practically nonexistent. CPU tests, on the other hand, test totally unrealistic. That means with low resolution and a monster graphics card (2080ti). Because the GPU does not reach its limit and the difference between CPUs can be recognized. But it has nothing to do with reality.
