At the moment I own the following system:
AMD A10 6700 (use integrated graphics unit)
16GB DDR3 RAM
2TB HDD
Mainboard Asus FM2+ (exact name I do not know at the moment, but should not be so important)
What do you say, should I buy an SSD as well as an AMD Ryzen 5 2600, 8GB DDR4, a suitable motherboard and a Vega 56 to upgrade the system? Or would it not make sense to assemble a completely new system right away?
Use the PC for gaming (Fortnite, Minecraft, GTA5) as well as for video editing and image editing (Premiere and Photoshop)
What is your opinion or do you have a completely different idea or suggestion for improvement?

All you want to buy new. So you have a new PC because only power supply and Case remains. Presumably, you also have to buy a new power supply.
I noticed during the writing out… I think I will buy a completely new system, everything else I think makes no sense.
