Since I'm going to get a 240Hz monitor, I want 240 FPS accordingly
Play Fortnite and play on low settings (resolution: 1920x1080), but which graphics card would be enough for me?
I would like to be able to stream + play Fortnite on the side…
So I have the choice: Rtx 2070 super, rtx 2080 super, rtx 3070 (when it comes out) or rtx 3080?

The 3070 would probably be the best decision. At low settings and 1080p, the RTX 3070 even makes a proud 400FPS (300 at 1440p). The 3080 would be excessive and the 2070super is a bit too expensive. If you don't want to build it until January anyway, you should probably have a good chance of getting one.

What resolution? 1920x1080?
If you want to play in 1920x1080 with low settings, an RTX 2070 Super is enough to get well over 240 fps.
Until January, an RTX 3070 could also be attractively priced and you have reserves to be able to play games with very high fps that are a bit more demanding than Fortnite.
