I have set on my PC at the game Fortnite that it displays FPS…

So if I play now I have on my 60 hz monitor with the GTX 1060 and the Intel Core i5 8600 k in 1680 by 1050 resolution about 200 fps…

I think that should not be eig at 60hz right?

And how do I make it display the correct FPS?

Is everything right? Your graphics card produces 200 FPS, your screen with 60Hz can only represent 60 of them. The rest is therefore unnecessary power consumption and load.

I recommend limiting the FPS to 120.

Monitor & Computer do not hang together! Your monitor has a frame rate of 60, but your graphics card could be THEORETHISCH itself a 200hz monitor. The "correct" Fps are already displayed. Once this number exceeds the maximum refresh rate of 60, the monitor is busy and it is no longer possible. In the Fortnite settings, you can probably change the refresh rate from "infinite" to "60hz / fps" in your case. Fortnite will not try to produce more than 60 frames per second. But you can overclock your monitor, with 60hz monitors you can usually get much out there. Here is a tutorial:
